After overdoing my carb intake earlier in the day, I decided to grill some eggplant for supper. Once I had the grill heated up, however, this turned into a much longer process than I had planned and I ended up not only grilling eggplants but zucchini, yellow and green bell peppers and a small pork roast that I had marinating in the fridge.
If you've never grilled eggplant before, you should absolutely try it! Cut it thick, spritz it with some olive oil, sprinkle on some of your favourite seasoning rub and grill it at a high temperature. My grill just goes to 425, so that's the setting I use. The eggplant carmelizes and takes on a sweet flavour. It's great to eat alone or you can keep some in the fridge to use in sandwiches or incorporate into other recipes. For example, I used the last of an earlier batch of grilled eggplant as one of my veggies in chow mein.

Today was a gorgeous day and I couldn't resist going out to tramp around for a bit. I'm trying to get in as much activity and exercise as I can while summer maintains its ever-slipping grip on us. :)

Okay Dailybooth. I give up. You win. Clearly you mean that in order to booth, I must sit down in front of a PC, transfer pictures from my phone to my computer, then upload them. Your app no longer works. Your booth-via-email feature doesn't work (or at least is so delayed that the picture I attempted to post via email a half hour ago still hasn't shown up) and I am tired of trying. So here I am. In front of my computer. The way you mean for me to be. Forgive me if my concession speech is less than gracious.

I visited the Halton Region Museum today and amidst all the fascinating Victorian era items on display, there was, in the stairwell of the converted farm building in which the museum is housed, a shelf with these items. I wondered what the first one was, but didn't get a chance to ask. I'll be back there tomorrow, so join me in guessing what the first item is and we'll find out if we came close tomorrow. I'll post a closer picture of it in the comments.
