I baked a delicious garlic & basic parmesan chicken with broccoli/tomato salad.
Ingredients:
1 skinless, boneless chicken breast (about 2oz)
Garlic & basil seasoning
Ground Pepper and Salt
1 cup frozen/fresh broccoli
Half a tomato
Extra virgin olive oil
1. Preheat oven to 375 degrees. Place an unfrozen chicken breast on a cutting board and get one of those hammer things. Beat the chicken breast a little bit to make it more tender. Then grab some tin foil and wrap the sides so that no liquid can escape. Place chicken onto tin foil.
2. Pour a teaspoon amount of olive oil over the chicken and coat it underneath so it's not sticky. Turn the chicken over a few times. Then season BOTH sides with the garlic & basil seasoning and ground pepper. Sprinkle some parmesan on top.
3. Stick the chicken on the very top rack of the oven. It helps get that golden brown colour. Bake for about 15-20 minutes or until golden brown. DO NOT OVER COOK IT!! Otherwise it will be really dry and gross. You can pour a little bit of vinegar or cooking wine over it to make it more tender between cooking.
4. Cook the broccoli according to instructions.. or however you like it. Then chop up tomatoes. Once on a plate, sprinkle a dash of salt, ground pepper, and more parmesan on top.
Honestly, the cost of text books is ridiculous. I'm glad my calc and chem books are lasting me 2-3 years. But each one was still like $300 a piece when I bought them the previous semester. It's ridiculous.
Not to mention professors require us to get "guide" books that most likely we won't even use! Or we'll use them one or twice and that's it. $30 down the drain. Screw that.
