    Chicken Roll Up

    4oz Carved Roasted Chicken
    1 slice Muenster Cheese
    1 tbsp Mayo with Olive Oil
    1 low carb Wheat tortilla
    1 dill pickle spears
    19 Sensible Portions garden veggie chips(potato, tomato, spinach)

    Put mayo on tortilla with meat and cheese and roll it up. Serve with chips and pickle spears

    Breakfast Casserole

    Makes 4 servings

    1lb Turkey Sausage
    2 Portobello Mushroom Caps
    1 16oz carton of egg beaters
    6 slices of bread, crust off
    1 cup shredded cheese

    Brown the turkey sausage until there is no pink left. Preheat oven to 375 degrees. Coat baking pan in pam, and spread ripped bread on the bottom. Put cooked turkey sausage on top, then mushrooms, then cover with cheese. Bake for 45 minutes or until cheese starts to brown.

    BLT

    Makes 2 Servings

    1 mini baguette (6oz)
    6 slices of turkey bacon
    2 leafs of romaine lettuce
    1 tomato
    1 tbsp Miracle Whip
    Mixed fruit

    Cook bacon in pan or in microwave, slice up tomato, wash and peel lettuce, and place on baguette. Cut baguette in half for two servings. Serve with fruit.

    Seasoned Fillet Mignon

    Makes 2 Servings
    Pinch of basil
    pinch of salt
    pinch of pepper
    2 portobello mushroom caps
    2 4oz fillets
    1 package of steam fresh potatoes
    1 small head of broccoli

    Season steaks and put in pan with sliced mushrooms. Cook each side about 5-6 min over medium heat or until desired temperature is reached. Take mushrooms out of pan if they are getting too well done. Steam broccoli by putting a small amount of water in the bottom of a pan and placing over medium high heat for about 6 minutes. Serve with steamfresh potatoes.

    Spinach Linguine with Shrimp

    4 tbsp of EVOO
    3 cloves of garlic
    2 tsp dried parsley
    2 cups spinach linguine
    1 portobello mushroom cap

    Heat olive oil in a pan and pressed cloves of garlic. Saute over low heat for about 3 min and remove from heat. Cook pasta according to directions. Place shrimp in pan with EVOO and garlic and cook about 3 min on each side or until fully cooked along with mushrooms. Throw in drained pasta and toss around in sauce. Makes 2 Servings.

    Bagel Turkey Burger and Sweet Potato Fries

    Makes 2 servings

    8oz of lean ground turkey
    1 portobello mushroom cap
    1 Bagel thin ( http://ep.yimg.com/ca/I/low-carb_2130_3304653 ) I used the everything bagel
    Any burger toppings you might want
    1 large sweet potato
    1 tablespoon Extra virgin olive oil
    1/4 tsp Seasoning Salt (http://www.citysackers.com/images/seasoned%20salt.jpg)

    Preheat oven to 450. Slice sweet potatoes into wedges or fry shapes. Put olive oil and seasoning salt in ziplock bag with sweet potatoes and shake. Place on baking pan and bake for 20 minutes turning once.

    Separate ground turkey into two patties and cook for about 5 min on each side or until completely brown/white throughout patty. Place on bagel and assemble burger. Serve with half of sweet potato fries.

    Panko Crusted Fish

    Makes 2 Servings

    2 4oz cod fillets
    1/4 cup of panko bread crumbs
    1 egg beater
    2 tsp extra virgin olive oil

    Dip fillets in egg beater and then in bread crumbs. Heat olive oil in a pan and cook for about 3-5 min on each side.

    Served with 1/2 cup of Velveeta shells and cheese and 1/2 package of steamfresh peas singles.

    Wild Rice Stuffed Chicken

    Makes 2 servings

    1 8 oz boneless skinless chicken breast
    1/2 cup steamed wild rice
    1/4 cup diced celery
    1/4 cup bread crumbs
    5-6 croutons
    1/4 clove chopped garlic
    2 diced mushrooms
    2 slices diced red pepper
    Pinch of salt

    Flatten your chicken breast with a meat mallet until about 1/2 inch thick. Mix ALL other ingredients together and place in the middle of the chicken and wrap around so that it is enclosed.

    Place 1tsp olive oil in a pan and heat. Place chicken in pan and cook about 5 min on each side or until completely white throughout chicken. Cut breast in half. Each half is one serving.

    Buffalo Chicken Pinwheels

    1 tortilla (I used tumaro's low carb)
    1 Slice of cheese (I chose Muenster because it has a very deep taste to it.
    2 oz of Perdue Spicy Buffalo Chicken

    Place the meat and cheese on top of the tortilla and roll very tightly. Cut off ends and then slice about 3/4ths of an inch slices and stick with toothpick to hold together.

    Paired with 1/2 cup cottage cheese and mixed fruit.

    Grilled Chicken and Mashed Sweet Potatoes

    4oz of chicken
    pinch of basil
    pinch of parsley
    pinch of oregano
    2 tsp Extra Virgin Olive Oil
    1/2 cup Bob Evans Mashed sweet potatoes ( http://www.bobevans.com/images/products/mashed%20sweet%20potatoes.jpg )

    Rub 1 tsp EVOO on chicken and coat with spices. Heat other tsp olive oil in pan and cook 5-7 min until white all the way through.

    Plate with sweet potatoes cooked according to directions.
